Lot of our customers want to grind 1-2 lbs (500gms - 1 kg) of cocoa nibs in the ECGC-12SQSS unit. We heard our customers and have come up with a solution for small batch chocolate. This mini drum and roller stone set is ideal for customers who want to test microbatches of chocolate in a batch for recipe testing. This drum and roller stone set can grind 500gms – 1Kg (1-2 lbs) of cocoa nibs. Also the roller stones are cylindrical to imitate the ECGC-65E Grinder, so scaling up is much easier.

Stainless steel wipers (SS wipers) are used by the customers who want minimum delrin parts in the food contact area. It is also useful when using the ingredients that are more viscous and can stress the delrin wiper. SS wipers are also more hygienic.

The granite conical roller stones and stainless steel wiper assembly or Delrin wiper assembly are attached to the stainless steel roller holder assembly. The whole roller stone assembly is removable as one piece. They are easy to clean, handle and store. The roller stone assembly is locked into the lid for reproducible tension. The conical roller stones serve dual function – grinding and conching. Roller stones are made from high density granite that lasts for decades. Conical roller stones make complete contact on the grinding surface and grinds by crushing the ingredients. Wider grinding area also means better grinding and tighter distribution of particle size. Crushing reduces the heat generation and preserves the nutrients and delicate flavors. Overall, it results in great tasting chocolate with great mouthfeel. Conical roller stones are also lighter in weight compared to cylindrical roller stones

Some of our customers are using the melanger for other than grinding cocoa nibs. So we have introduced cylindrical roller stone assembly for ECGC-12SQSS units. This cylindrical roller stone assembly includes 2 cylindrical roller stones, SS wiper assembly, and stainless steel roller holder assembly.

Chococleaners help to remove the chocolate liquor stuck to the roller stones – saves chocolate, cleaning time and energy. Once the grinding is done, remove the drum assembly from the melanger. Remove the roller stones with chocolate from the drum. Place the chococleaner on top of the drum. Then place the roller stone assembly on top of the chococleaner. Rotate the roller stones and all the chocolate liquor drips into the stainless steel vessel. Clean the sides of the roller stones using a spatula.

Chocokneader mixes the chocolate liquor with nut butter and other ingredients that do not need grinding. It also helps with conching -customers use it to mix milk powder with chocolate liquor. Adding milk powder during grinding increases the viscosity of the chocolate liquor. her problems such as reduced life for the roller stones and broken wiper. The problem is exacerbated when the ambient room temperature is colder (in hilly areas or colder climates) or the humidity is higher where the melangers are used. So we recommend our customers to grind cocoa nibs and sugar to 15-20 microns. Then remove the roller stone assembly. Replace it with chocokneader. Add milk powder and switch on the unit. It takes about five minutes to finish mixing the milk powder. Chocokneader is also useful for mixing inclusions (such as nut pieces) into the cocoa liquor uniformly without grinding the inclusions.
